Imogen is working her way through the recipes in Dr Joel Fuhrman’s book Super Immunity. Dinner tonight was:
Place the lentils and water in a very large pot over low heat. Bring to a boil, reduce heat and simmer. Add the zucchini whole to the pot. Add the carrot and celery juice, and VegiZest.
Put the onions, leeks and kale in a blender and blend with a little bit of the soup liquid. Pour this mixture into the soup pot.
Remove the softened zucchini with tongs and blend them in the blender with the cashews until creamy. Pour this mixture back into the soup pot. Add the mushrooms and continue to simmer until lentils are cooked – about 2o minutes.
Dessert was Forbidden Rice Pudding:
1 cup black rice
2 cups plant milk ( we used oat milk)
1/2 cup dried apple, soaked in 1/2 cup boiling water
1 cup frozen blueberries
2 pitted Medjool dates, diced
1 tbsp currants
2 tsp cinnamon
2 tsp vnilaa
1 tbsp ground chia seeds
Bring black rice to the boil in 2 cups water. Reduce heat and simmer, covered, for 40 minutes or until water is completely absorbed.
Place all ingredients except chia in a saucepan and bring to the boil. Reduce heat and simmer for 15 minutes. Turn off the heat, stir in chia and leave, covered, for 5 minutes before serving.
